SMF fury, 372 agi weapon > 359 strength?

I am just using SMF fury for off speccing on half the fights that we one tank, so there's no reason for me to roll on the only STR weapon which we just sell for 40k. 146 strength vs 100 weapon dps (+20 or so in each combat rating too). Is the +100 weapon dps better for mainhand only or both hands?

There's only a 60 dps difference between 359 and 372 onehanders, but let's look at your problem:

Simcraft 4.2.0 r1 shows:

372 BiS gear + heroic Lavaspines at 27.337 dps
same gear but 2x regular Lavaspines at 26.863 dps
same gear but heroic Lavaspine with agility instead of strength (mainhand) and regular Lavaspine offhand at 26.880 dps
same gear but 2x heroic Lavaspines with agility instead of strength at 26.728 dps
same gear but 2x regular Lavaspines with agility instead of strength at 26.233 dps

Conclusion? Weapon damage means almost nothing, strength is king. Even at worst case (2x 359 agility weapons) it's still only ~4% less dps to 2x 372 strength.

You're looking at 19% increase in base weapon damage.
+23 Crit
Trading 111 expertise for 97 haste (win if it allows you to reforge other expertise into crit or hit)
+.718% crit from agility

And giving up 153.3 strength (after factoring in Kings/MotW)

I would think the trade off is worth it. The tier and half upgrade (359 -> 378) for MH weapon damage alone would make it worth most likely.

The gap is bigger I just upgraded to Simcraft 4.2.0 r2 so there's a noticeable difference to my last post:

372 BiS gear + heroic Lavaspines at 26.532 dps
same gear but 2x regular Lavaspines at 25.802 dps
same gear but 2x Shatterskull Bonecrusher at 26.270 dps
same gear but Shatterskull Bonecrusher mainhand + regular Lavaspine offhand at 26.192

At 90 weapon dps difference plus the noticeable increase in substats you can start seeing a trend even while yielding agility weapons.
