Returning Tankadin Needs Refresher

I recently came back to WoW after taking much of the last year off; with Cataclysm radically changing so much, I find myself confused about what stats to shoot for on my Paladin tank. Defense used to be big, but is now gone completely. Blocking also used to be great, but now that several of my abilities have been changed (Holy Shield being forefront on my mind) it doesn't seem quite so hot anymore. And now I have a new resource to manage (Holy Power).

I've been able to hold my own as a tank, even working my way up into some heroics, but I'm still extremely shaky on what stats I need, and perhaps more specifically, how to tell if I'm "up to snuff".
