A bunch of us are aiming to do this over the next few weeks, and I'm just looking for a quick bit of advice. It's been ages since I did Ulduar at the time and can't remember how gemming etc differed back then. Given Algalon's fast attacks, is it worth putting any more priority on block/avoidance than it is now or carry on with Sta, Sta, Sta?

Block will help, but it won't save you, you won't be able to get it very high in that gear. Same with the avoidance, he misses you 5 times then hits you you still need the stam to absorb it. Stamina all the way for this.
