help the importance of expertise and hit for tanks

hi guys , ok so i'm kind of a new-ish tank.

so I read up a while ago that these stats were very important
    8% hit rating 26 expertise
which I worked hard to get on all 3 of my tanks.
    (pally, warrior, DK)

anyway i'm beginning to wonder how important these stats are because
i keep seeing lots of tanks not just on my realm but on forums
posting their armories and I like to compare so I look them up and
most never have that much hit or expertise.

And they're always better geared than me.
but they're all stacking just pure stamina, now I gem with multicolour
gems to make sure i have the 8% hit and 26 expertise so it's sam + hit or expertise+stam gems with only a few pure stam gems on.

long story short is am I wrong to be doing that?
I was under the impression that it's bad to stack pure stamina
if i'm lacking on the other stats as they're supposed to help with
    my threat generation.

I'm of the view that they're nice to have, but surviving > everything.

I mean I'm not quite capped for either, but I have no threat issues at all so I've dumped all my gemming and gearing in to survival.

I think it all depends on what you need and what you're struggling with. If you're struggling with threat then hit and exp are going to help enormously. If you're fine for threat then the best thing you can do is up your survivability IMO

Well, I'm close enough to hit cap, and AM expertise soft-capped, even UNglyhed. I recently stacked on more stam, replacing gems that had stats I no longer needed to gear for. Yey for being a loladin, easy expertise. Only *HAVE* to get like 10 from gear, 6 are from talents, and the other 10 you can glyph for
    I'm an alt-oholic. I'm ok with that.

Threat. That's what they are for, if you aren't having issues, don't worry about it. Search function is in the upper right hand corner of the forum page.

    ok so since i'm capped
let's say I were to drop some hit / expertise for stam
what would be acceptable amounts to drop before my threat becomes an issue?

Without wishing to cause "trouble" I've got a question about this, and specifically the mitigation of the risk of taunt misses with low hit ratings.

A warrior can glyph taunt so that the miss chance becomes vanishingly small, a DK can fall back to DG if required - what is the option for Paladins?

This is a serious question. I've never played a paladin but had "fun" dealing with one that was attempting to tank alongside me for DBS and spent the majority of the time going "taunt miss", "missed again", "dam missed" blah blah.

Righteous Defense. But all 4 classes have a glyph for it. If you need another piece of hit gear to be safe then add it for that fight.
