My head enchant options are:
+20 defense and +37 stam

Or

+45 stam (engineering only)

Should I go with 45 stam since I dont need the defense?

You really dont need the Defense, get the stam. Also you are way over the cap, start swapping out gems for +stam. Just make sure you have the right gems for your meta.

The engineering is superior if you are over 536 defense with the pvp shoulder chant.
