First off...
UI changes...
You don't need any if you're just beginning. Trying to build an entirely custom UI before you even know how to play the game is meaningless. How do yu know what to change when you don't understand how you will use it. No one should advise that a complete beginner go around customizing their UI from day one. You're worried about pimping your ride before you even have a tricycle. Personally I think you should get some wheels before you go out looking for streamers to put on the handle bars.

You don't need to know everything before you put the installer in your system. You learn as you go. If there is something you don't understand or want to improve, you explore further into that.
In regard to buying the games...
You need all three keys to play Wrath of the Lich King, however if you buy all three you have the advantage that Wrath of the Lich King's DVD rom is a full installer (you don't have to install the prior versions because it is included).
