My personal recommendation is to actually play the game as it was intended, and just dive in and do some quests and see how you feel. Might not be the most efficient way of doing things, but you will learn how it all fits together.

If you are absolutely set on using a guide, try googling 'wow alliance leveling guide'. That's all I'll give you.

As far as Leveling on Alliance goes...

Quest in the Night Elf starter area til level 10.
From here you have 2 choices go to Darkshore and quest til level 15, or go to Stormwind and start questing in the human starter area.
Do the quests in forest outside of Stormwind, or go to Westfall, then Redridge Mountaints, then Duskwood, then to Hillsbrad, then Stranglethorn Vale, then Duskwallow Marsh, then Tanaris, then Feralis, then Felwood, Ungoro.

Those places should get you to the 50s easy.

Darkshore, Ashenvale and Forest song alone can get you well into the 30s.

Darkshore isn't too bad for questing, but Ashenvale is full of suckage.

First off...

UI changes...
You don't need any if you're just beginning. Trying to build an entirely custom UI before you even know how to play the game is meaningless. How do yu know what to change when you don't understand how you will use it. No one should advise that a complete beginner go around customizing their UI from day one. You're worried about pimping your ride before you even have a tricycle. Personally I think you should get some wheels before you go out looking for streamers to put on the handle bars.

You don't need to know everything before you put the installer in your system. You learn as you go. If there is something you don't understand or want to improve, you explore further into that.

In regard to buying the games...
You need all three keys to play Wrath of the Lich King, however if you buy all three you have the advantage that Wrath of the Lich King's DVD rom is a full installer (you don't have to install the prior versions because it is included).
