you shouldn't be getting in heroic toc or the new icc 5 mans until you get a bit of gear from the easier heroics first. blizz has an internal gear checker with the lfg system that prevents new 80s from being thrown into h hor or h toc. if the tank dies in one of the heroics you are in and they aren't all "epic'd out" with an over 9000 gear score then it's either the healer's fault for not popping cd's or the tank's fault for pulling too much/not having a clue what to do.
my gm just hit 80 on his alt warrior so for the first week i hopped on my alt resto shammy and healed him through quite a bit of heroics. yes it was a little hard at first but we never wiped. he was in full blues from quests and my shammy has mostly all badge gear with 0 25 man raid items. i had a blast, i wasn't falling asleep with just having to earth shield the tank or trying to dps mobs, i was actually healing my butt off and i really enjoyed it. i would suggest getting a healer from the guild to help you out or try to stick with any healers in lfg you get that will heal you.
now on my dps warrior main, yes i would get a little worried with a low geared tank, mostly if they have less hp than me in my dps gear (28.7k). it means i will probably be tanking everything the whole run or dying quite a bit. but, due to the gear checker once again put in by blizz, this is prevented. either way i wouldn't leave, i'd stay and try to give any pointers if they aren't too familiar with tanking yet.
tl/dr: stick with lfg healers who will heal you/find a guildie healer. people who leave are probably bad players who need to get carried by 40k hp tanks.
