Turned 70 about a month ago and not sure if I took the right path with my gear. Perhaps I am too Stamina heavy as one person mentioned that my strength is way to low which means I won't generate enough threat. I'm relying on Shield Slam, Devastate, TC, Revenge, and Taunt for threat. In some groups I seem to do very well. In others, I could swear they are not following the kill order or I am just terrible.

Would greatly appreciate feedback, criticism, advice, etc. on my toon. Don't hold back, I am used to getting beat on.
For just hitting 70 your gear looks fine. I would probably replace shoulders with S2 once S4 comes out, not too much honor and they would be a huge EH upgrade. There are quest boots and bracers that would be mroe than jsut stamina, give you some BV and defense, think they are shatari something, might check Berg's list. Pick up a ring from Old Hillsbrad reg mode and magister's reg mode, neither should be too hard for you to get and will be upgrades from just pure stam.
Part of this comes because I have the Tank Points add-on which gives me the Tank Points and EH calculation. It always gives a + plus on the stamina over something like a Champion (or dungeon drop) piece.
I also recently switched to the Aldor Revered chest over the Warbringer which take +30 hit rating off the table. I'm eating Spicy Talbuk to give me +20 hit when I am in the instances.
Bad part, is that I don't feel confident to run Heroics and no one seems to want to do normals anymore on my server.
Hit rating food is good, do not worry about hit other than that. You should get threat from Shield Block Value at your level, look for gear that has that. Keep to the easier heroics (Mech, UB, Bot, Ramps) and gear up that way, do not try to do the tough ones for a while.
Also, switched out one of the pure Stam rings with Andormu's Tear - Andormu's Tear - Item - World of Warcraft which ups my Def/Dodge/SB rating.
Of course I am down to 12284 health now. Should I consider swapping out the two +defense gems on my gloves with +Hit gems?
Reading that +hit and expertise are the #1 threat generators. Trying to sort out the raid advice I think I have been following too from the 5-man and Heroics advice.

Wait you switched out t4 for the Aldor revered one? The Warbringer chest is better.

Stop worrying so much about stam right now. I did H ramps last night with a tank that fully buffed only hit 13k hp, and it went easy, and I was the only one not in blues. Keep getting all your stats up, the HP will come naturally. And do not gem for hit rating, you do not really need any yet, the only hit gem I ever put in my tank gear was on my khorium destroyer and I always caught crap for it.
25K Health isn't going to keep you alive if:
a) The mobs are hitting your healers, and
b) The mobs are never missing you when you do have aggro.
I think all of the EH talk and the insistence on Stamina gems has a lot of new Tanks a little confused about the importance of Health. In reality Tanking well is about finding the balance of Health, Avoidance and Threat that works well for the content you're currently tackling.
Cant access armory from work, so ignore me if this isn't relevant. The only hit rating item I used when I hit 70 was a green quest reward ring, something to do with "windtrader" in its name, if you havent already done the quest it might be worth looking for, but otherwise I wouldnt worry about hit too much.

I have Grom'tor's Charge as well as access to the SSO sword Inuuro's Blade. Being that I am Orc and get the racial for axes, I thought I would stick with the Axe. Is this Axe worth sticking something like Executioner or Mongoose on? I hear I won't have to replace it for a long time. (Sun Eater, King's Defender, etc.)
Picked up the S1 PVP shield and put a Felsteel spike on it for threat stats. Been using this but will be reaching Exalted with SSO tomorrow and wonder if I should switch to the Dawnforged Defender? If so, should I also go shield spike for threat? or an enchant?
What about the S2 Shield which is now available for honor? Should I be considering this? Grinding out 15000 Honor as a protection warrior is very painful so not sure if should do it again.
Still using some AH shoulders. (of the Champion) Some people have recommended going with the PVP Honor shoulders and I haven't seen a lot of other options out there. Ideas? If so, how should I gem it?
Ugh too many questions, brain hurts...joking SSO sword would be better for tanking, even without the racial. Mongoose if you can afford it, agility if you can't. Shield yes get the SSO one and chant it with stam, spikes are for weird aoe farming or dragonhawks if you can't find a pally. Only decent tanking shoulders that you can get from heroics are from Setthek, Spaulders of Dementia I believe they are called, otherwise go get your S2, I tanked with S1 through heroics, kara, and the first half of SSC, nothing wrong with them. Nice tanking shoulders drop off Netherspite in Kara or First timed chest in ZA.
So I did the awful and painful task of grinding out 11250 Honor and 20 AB marks and picked up the Merciless Shoulders. A protection specced warrior in the BGs is just plain ugly.
Due to a lack of defense gems in the AH, I socketed the shoulders with two +12 Stam gems which lowered my defense to 505. Being that the minimum is 490 and there is no maximum, at what point do I sacrifice defense for other stats? For example, at 505 defense should I still be stacking defense over stamina?
Also, am I ready to start the easier Heroics yet?
