I did a weight scale using WoWhead for the top tanking two handers available so far (original thought was if I should spend money I don't have for the Titansteel Destroyer or wait for Demise from Naxx). This is what it came up with using the scale...

Looks pretty good to me. I would however weight in the resil from the PVP weapons as a + for tanking weapons. I am considering getting the blue sword for my tanking set so I can swap out some of my def gems for stam gems. Also, they have good weapon DPS and alot of stam.

I think your missing dodge and parry rates. I know that, with Mojo Masked Crusher, I can gain about .5% of avoidance than with the Titansteel destroyer, while sacrificing 2% hit and 200HP.
As a DK Tank, it's also important to be able to avoid being hit, as it is to be hit. Hit doesn't impact me too much, as I use a lot of spells and abilities while tanking (Frost Spec) to hold my ago.
So, you may want to add some points to dodge and parry points, as well.

Why is AGI less that STR? I am not sure I would agree with your weighting. How did you devise it.
What about AP how many points did you give it and Crit or does this ignore threat?
Betrayer of Humanity is a far better tank weapon than your scoring suggests for example although this is just an illustration of the problem here.
"Melee Hit" is that different from Hit? Are you ignoring Hit points in excess of your melee Hit Cap? Are you ignoring the stats you already have. For example 1% Hit below melee hit cap is worth more than 1% above. 1% above "spell" hit cap is worthless.
I think this scale is pretty poor. Maybe try the DK Tank template on Lootrank and tweak that to suit your needs.
