My current problem is that I can either work toward maximizing my crit/str/arm pen or make sure that my expertise stays capped, buy using gear that isn't "rated" as highly as the others.

Do I focus on keeping expertise to 26, or do I allow it to slip down in order to gain crit/str/arp/ap? I have a lot of new gear from ulduar, but it will lower my expertise down far below 26, unless I gem/chant for it.

Just not sure how the priority works since the ulduar gear has come out.

What spec are you? Sounds like you are fury and if so yes.

I'd take the gear that gave you the most overall stats, and if that means losing expertise, and having to toss in a couple +16 expertise gems to make it up, then do that. If you're in Ulduar level gear, then your SEP value for Expertise will be higher then 1.0, so it's more valuable then Strength. Once this is true, take the best gear, and then hit your caps with gems to balance out your stats.

Yep, get as close to the exp cap you can by using some of the best gear, and if you need too downgrade one peice, you downgrade one, or gem. The expertise and hit soft cap for melee DPS are pretty much non-negotiable, especially in ulduar gear levels ^_^
