I was actually about to post a question along these lines when I saw yours. So I'll combine my current method with my plea for help. (Unfortunately, I'm at work so can't post a screen shot though)
I used to run with a HUD with arcing bars, so I broke SCT's info into 3 scrolling areas - left, right, and between the bars.
Left side was incoming heals.
Right side was incoming damage, blocks, dodges, parries, etc.
Center was my outgoing damage and notifications of tclap getting resisted, etc.
That worked ok for me as our guild MT, but probably wasn't ideal.
Now that 3.0 has hit and I'm doing a lot of AOE tanking, I'm in information overload. The display has almost become meaningless, because it's producing data way faster than I can usefully process it. As a result, I'm missing the important stuff in the sea of mundane.
So, like the original poster, I'd love some suggestions on how other tanks set this for more helpful viewing.
