I want something clean for movie making as well as general utility. Here's my list so far, as far as options: SCT
Bartender
Elk Buff Bars Itemrack
Auctioneer
Bejeweled
What else do I absolutely need? What are alternatives to the above that you feel are better? What's on the horizon?

Pitbull - for Unit Frames is what I use and I couldn't live without it.
For hotbars I like Bongos better only for the easy Key Mapping feature.

umm, I was going to say Omen, but hey if our threat is so uberz now, maybe we don't need it as a tank anymore hehe.
I also use Bartender and ItemRack, but use MK's Scrolling Battle text instead of SSC, not sure why. lol
My must haves;
Rogue Spam to remove the error messages like "not enough rage" etc. Those annoy me greatly. Probably newer addons that do this also.
Trinket Menu - its'very nice if you switch out trinkets alot or are too lazy to open your inventory.
Prat for chat.
WiM - because it logs tells while I'm busy tanking and I can go back later and see them easily.

/kb on bartender is amazing
plus i think bongos is no longer being supported?

As far as clean goes cider, you can't go wrong with ace2 even though they're not really supporting development atm.
AgUF or Pitbull for Uframes.
SCT/Parrot/Mik, customized to your liking.
I also like bartender3.
FUBAR: My reasoning on this is because it lets you view mods if you need to view them(drdmg/topdmg/performancefu/closetgnome/moneyfu) without mucking up your minimap.
Squeenix! Squeenix is an absolute must imo for putting the minimap where you really want it.
I'm not a big fan of bejeweled or auctioneer but meh.
Also I run many many more mods, but this should get you through the day. Feel free to try Buffalo instead of ElkBuffBars. I made the switch and wow, it is amazing how much better I like buffalo w/Vex's setup.
Vex uses visor2 frame modifier for many frames in his UI. I'm not a fan of this as if you don't set it up or learn quickly, they can get very very difficult to organize especially without a real GUI to edit the frames etc.
I can't live without Tankpoints/Ratingbuster or dr.dmg.
Dr. Dmg lets me put on my buttons what I feel is going to be the most realistic damage with each attack. It also gives me good theorycrafting use with some additives.
Ratingbuster is great just since you can really see what something does for you instead of doing math, just a million times easier.
That's about all I recommend, I use many many more mods, but these really cover what I would run as a minimum.
Oh and Closetgnome > Itemrack imo.

When I played with Bartender I still had to go into the Key Bindings Menu
With Bongos when you Alt Click (I think) on the minimap icon it goes into bindings mode. You just hover your mouse over the hotbutton you want to bind and just hit whatever key you want it bound to. It also automatically unbinds that key from anything it was bound to before.

One quick thing about Bongos is at first it seems kinda odd. You have to click on the minimap and then alt drag to make a hotbar appear. Other then that I love it but I have been thinking about giving BT4 a shot too. As far as support I am not sure about Bongos and that could be a problem with 3.0 since the version I had did not work on PTR.

hmm well about pitbull, i have been using if for quite some time now, and its a gr8 unitframe addon, easy to setup etc, altho having this problem now with latest version.
its a wierd one aswell, i get a error if the "aura" setting is on, wich basiclly lets me see the debuffs on my target.
so if i cant fix this problem i wont be able to see the debuff = epic phail, so then i gotta try maybe ag_unitframes or smt.
but the wierdest part about it is that it works fine on my other chars, i see the debuffs fine and get no error, but as soon as i logg in to my warrior it completly ****s up.
anyone experiancing this aswell?
