Off Tank Gearing for TOC and ICC

I run in a casual raiding guild (Red Tear on Moonrunner), mostly in the role of Off-tank. I've been sticking mostly with an EH set, switching out for a block set on Anub adds and +AP trinkets on the Faction Chumps. But I'm not sure if this is optimal... On fights where there's basically two tanks trading aggro, EH makes sense, but when the OT is holding/killing/interrupting adds I'm wondering about other gearing ideas.

I'm >540 def, expertise capped, and pretty close to the hit cap (although you can't see that on my armory now, as I logged out in my fury set. Here's the link if you are interested:

And I'd say you'd still stick to your EH set, if it's trivial you can wear more threat gear or dps gear even, but I'd venture to say that one some fights, adds are just as hard as the boss (thinking deathwhisper)
