Needing Advice for future gearing

Hello everyone, love the website, has tons of useful information, but I have a bit of a selfish question to ask.

I need a bit of direction on where to go next in terms of gearing and gemming.

In the past, I've been mostly stacking stam, keeping up with the defense cap, as well as been somewhat trying to hit the Expertise cap (Got no luck with some tank drops...)

Should I continue to stack stamina? Or should I be focusing a little more on my avoidance? Its a little lower than I've seen on some tanks on my server.

25 ToC is not all that accessible to me, its hard to get into a decent group on my server, low, undergeared population. Our guild has been casually clearing 10 ToC and had been wondering where I should be going with my tank gear. (We decided to skip Ulduar due to the limited raid time our guild has to get 10 people on, everyone has a hectic schedule)

I'm definitely at a loss here after browsing quite a few threads about gearing and gems. I'd like to be semi-prepared to give the new 3.3 raid a shot at without having it being a problem on my end or the healers.

I would just continue stacking EH because of the fact that the majority of things that are going to kill you are unavoidable or you die in because of a worse case scenario physical burst damage. A few things I would change in your enchants is switch 22 defense to 275 health, 16 defense to 225 armor and titanium plating to either 18 stamina or 20 defense.
