So, long-time lurker, new to posting, so please pardon me if I screw this up.

I've been spending most of my time farming heroics, emblems, VoA, etc. However, I'm rather curious as to what my real capabilities as a tank actually are. I'm fairly sure I outgear Naxx-10 by a decent margin, but I'm not quite sure if I'm ready to face Ulduar. I'm also not sure how I'd fair against Onyxia, if anybody has any advise on that encounter. This is from a gear-wise standpoint.

Talents are good (damn! I just realised I specced into the wrong one on ret! ARG) , gear is solid for starting off with.

If you can afford to, get your JC up to max so you can get the JC only trinkets/gems/whatnot.
Next time you need to fill a red slot get the Agi/Stam gem instead of dodge. More beneficial for you.

Your gear is enough to do Uld 10, definitely.
Onyxia is probably doable, tho she does do some big hits which could be an issue; however raid buffed you should have ample HP as long as the healers are on their game and people arent' playing silly buggers.

Aim for the Libram of the Sacred Shield - Item - World of Warcraft (http://www.wowhead.com/?item=45145), a tasty upgrade to your current one. Libram of Defiance - Item - World of Warcraft (http://www.wowhead.com/?item=47664) is the next step up from Sacred Shield, but costs a fair few Triumph badges, which you would probably be better off saving and using for the T9 shoulders.

First upgrade to aim for would be chest imo, getting the token from Uld 10 or 25 would be a great upgrade.
