My gear is not that bad but why do i have so little hp? I had to ask this or would bather me.

Hey there, do you think you could post your armory link? I attempted to follow your Wow Character link but it was a faulty link. Maybe you are a player from Europe by chance. Is this correct? Or is the link jsut bugged?

There are 2 things I see.
First off, you have mostly blue gear. For blue gear, 23k unbuffed is right on schedule. You can't expect to have 30k unbuffed until you have full nax25/U10 gear, it's unreasonable.
Having said that, there is room for improvement. I see you are an enchanter, and that you have enchanted your own gear at the level of enchanting available to you. But realistically, the enchants that are discussed here 415+ range, for which you have a long ways to go. Either you need to grind out your enchanting or get somebody else higher than you to do it. I recommend doing it yourself, but that takes work or money (and money also requires work, so..). Incidentally, I have no idea how you are affording your crafting, those are amongst the most expensive crafting professions from a raw materials basis. I would have taken mining and JC, as the standards partner to enchanting, tailoring, is a poor fit for paladin tanks.
If you can get access to northrend enchanting, you can put in some key defense enchants on your shield, chest and cloak, allowing you to gem for stamina instead of defense. Also, stop gemming for dodge, that is for tanks much beyond your current gear level. Gem for stamina, defense if necesarry, then move on to expertise/stam for red slots, and hit/stam for yellow slots not taken up by defense. Buy an eternal belt buckle for thet belt, there's another gem slot there. Start with those first.

I took Enchanting and Mining, after I maxed Mining I banked all the saronite (shoulda done Titanium also-/kick myself), dropped Mining and picked up Jewelcrafting. I am now my guilds official JC and do all my own enchants, my raw gems are all bought with Heroism badges and honor, and I have an alt miner if I ever get back to him again. I know sounds crazy but if you are already 80 you will have an easier time than I did...GL
