I have gathered the 3 Frost Resistance plate pieces for the Hodir fight in Ulduar but now have trouble making the decision of how to gem them. By using this gear I have t drop my Valor Medal of the First War (http://www.wowhead.com/?item=40683) for my only decent def trinket Seal of the Pantheon (http://www.wowhead.com/?item=36993). I know that either way I will have to use the def enchant on the chest piece and possibly 1 or 2 defence gems. However I was also thinking about gemming the pieces until I hit 540 and then going for stam in the remaining sockets. How have you other tanks went about doing this as I'm still not entirely sure on the best approach.
