Gemming post 3.0

I got my Onslaught Shoulderguards - Item - World of Warcraft (http://www.wowhead.com/?item=30980) yesterday (hooray for me! ^^), and the first thing I thought was "Gimme some +15stam gems".
But on second thoughts my avoidance went down a bit because of the new itemization and diminishing returns. In my full "Bad Ass" Boss Tanking Gear I've got about 28% dodge, 15% parry and 496 def.
So maybe I will go with a parry and a defense gem, plus the +dodge socket bonus.
The last option I've thought about is Strength, with WotlK release and leveling in mind...
I just can't decide so I would appreciate some suggestions.

Grats on ya shoulders,, I hit the 500def and now im confused, dod25%,parry17%,block24%. I was toold to hover around 25to28% on dodge and Block. that parry not to bad if below25% but not lower than 16% any advice would be appreciated. Im predom, in T4 ZA badge gear with the Gruuls shield. My main question ,, "Whats a good/great "%" all three avoids should be at?
