Is it worth farming Greater nature/frost protection pots for Hydross tanks? The mats look like a pain to get.

Those arn't the 70 reciped you want Recipe: Major Frost Protection Potion & Recipe: Major Nature Protection Potion and no if you have a full resistance set its overkill if its for a first or second kill it can't hurt to help your guild get past it.

We went full frost and nature for our first kills - but didn't use any resistance potions.

..and yeah we've tried Hydross once and I thought it would give us an edge for the first kill.

The pots may be beneficial I imagine if you are attempting to lengthen your dps time so you hold the transition just a bit longer, pop the potion and then run across the line.

We've ended up using Magic Resistance Potion (http://www.wowhead.com/?item=9036) which have insanely easy to get mats. Works just fine when we try to push Hydross to the 5th debuff.

We generally have 2 warriors, 1 in full nature, 1 in full frost, and a pally in half and half. I don't think anyone uses those pots, but the pally tank uses a flask of chromatic wonder. (The pally tanks all the adds in both phases).

The only time a tank dies was generally near the beginning when he'd have healers too cautious to heal during a transition and a tank died right at the transition (which was fine, soulstoned, hopped back up and waited for the next phase).
